Aqua Vitae liquor store to open in Tamarack Hills

A new liquor store will soon open at Tamarack Hills in Woodbury.

David Wolfe, a Woodbury resident with experience in alcohol distributing, is hoping to open Aqua Vitae Wines and Spirits in January.

After getting approved for a liquor license at last week’s City Council meeting, Wolfe said he’ll continue working to get the space ready to open early next year.

“With the beer background and I guess the alcohol business and experience, this was probably the best, most logical step,” he said. “I figured it was time to maybe do something on my own.”

Aqua Vitae Wines and Spirits will be located in an empty spot at Tamarack Hills strip mall located off of Interstate 494 and Tamarack Road.

Wolfe said he picked the location because of the “upscale nature of it” and proximity to the freeway as well as easy access within Woodbury.

The name, translated in Latin, refers to alcohol as “water of life.”

“I didn’t want to necessarily tag it to my name,” Wolfe said. “It was one of those things that seemed appropriate.”

Just under 2,000 square feet, Aqua Vitae will not be a big warehouse type of liquor store, Wolfe said. Rather, it will have a variety of specialty and local beers, craft beers and “anything unique.”

However, Wolfe still plans to sell all popular brands of beer, liquor and wine, he said.

“I’d like to be known as a source of having the unique products on top of having the staples,” he said, adding that with his 20 years of experience in distributing, he is hoping to accomplish that at Aqua Vitae.
