The owner of a popular Woodbury sushi restaurant is reportedly interested in opening a restaurant in Hudson, Wis.

Henry Chan of Giapponese Sushi attended the Hudson City Council's Finance Committee meeting on June 15 and left the council chambers shortly after the regular council meeting began.

According to a knowledgeable source, he was there to inquire about the possibility of obtaining a full liquor license.

The local businessperson, who didn't want to be named, said Chan is interested in opening a restaurant in the now vacant Country Kitchen building off Carmichael Road south of I-94.

Chan didn't return phone calls asking about his interest in Hudson.

The city would have to make another full liquor license available to lure Chan to Hudson.

According to City Clerk Nancy Korson, 18 full liquor licenses are allowed under a city quota of one license per 650 residents. She said all of the licenses are in use.

State law allows a maximum of one full liquor license per 500 residents. The city has adopted a more restrictive quota by choice.

Chan's Woodbury restaurant is located on Citywalk Drive on the east side of Woodbury Drive and south of I-94.

The restaurant's website, www.giapponesesushi.com, says it's the only sushi bar in Minnesota that follows the Japanese-season fish calendar.

"Giapponese also imports rare species of fish from the world famous Tsujiki fish market in Tokyo, Japan. These fish are rarely or never used in the United States," the website states.

Chan, also the restaurant's executive chef, is said to have trained under a Japanese master chef.

In addition to sushi, the restaurant's menu includes grilled Scottish salmon, New York strip and rib eye steaks, mango chicken, wagyu lasagna and wok-seared udon noodles.
