Nadia Cakes opening bigger shop in Woodbury
An award-winning Minnesota dessert shop known for its competitive streak and whimsical cupcakes is opening a bigger store in Woodbury.
Nadia Cakes, which started in California and moved to Maple Grove in 2010, is building a brand new shop at one of the city’s new commercial centers.
Owner Abby Jimenez has had her eye on Woodbury for a while, since she drove across the country to figure out her next move and discovered the east metro suburb.
“We fell in love with Woodbury and started on the negotiations in Woodbury at the time and ultimately ended up in Maple Grove,” she said. “But we never forgot about Woodbury.”
Now that Woodbury is a bit more developed, she said it’s time to bring tasty treats to east metro customers and shorten their drive.
Nadia Cakes was recently voted Best Cupcakes in Minnesota in a CBS competition, winning by over 2,000 votes.
Jimenez’s list of accomplishments doesn’t stop there. The mom of three started her shop out of her home with a newborn, a 1-year-old and a 2-year-old, as a way to pay the bills but also embrace her love for cakes.
Naming it after her middle child, she ventured out and opened the Palmdale, Calif., store, and got the attention of major television network shows like “Cupcake Wars” and “Fabulous Cakes.”
Jimenez won “Cupcake Wars” season 4 where celebrity judge Florian Bellanger said her cheesecake cupcake “was the most amazing cupcake he’s ever had on the show,” she said.
The work she does every day at Nadia Cakes prepared her well for competitions, which she said are intense and never scripted.
“You film 12-13 hours straight,” she said. “It’s very real, the competitions are very real. It’s exactly like you see on TV.”
Jimenez brought on pastry chef Erin Campbell, who will also compete in a major television competition this fall, to run the Woodbury store.
“When Woodbury opens, Erin will be very well known,” Jimenez said. “She’s a very high caliber pastry chef, she’s much better than I am.”
Jimenez is taking the opportunity to open another Nadia Cakes to expand and offer a full line of desserts – from Sabastian Joe’s ice cream to tortes, pies, cakes and cupcakes.
More than 170 flavors will be available for order, including seasonal favorites and mystical cupcakes like the April Fool’s “Unicorn Poop” cupcake made of vanilla bean and frosting topped with a rainbow marshmallow mess.
Other popular flavors the bakery will rotate through include lemon drop, mint brownie and cheesecake. During the holidays, the novelty cupcakes come out with a Thanksgiving dinner inspired cupcake and pepper mint mocha classics.
The 2,700 square foot store will accommodate from 30 to 35 customers at a time.
“We want to be a one-stop dessert shop,” Jimenez said. “We want people to eat a restaurant and then say ‘let’s go to Nadia Cakes to get dessert.’”
Jimenez is proud of her sophisticated, upscale design and a couch that “has been the site of many wedding proposals.”
Nadia Cakes is set to open at a building currently under construction at the corner of Commerce Drive and Woodbury Drive north of SuperTarget.
Nadia Cakes hopes to finish remodeling and open just in time for Valentine’s Day.
